Here's a list of the best Open Source Software you can get; feel free to add to it!
I'd also recommend Debian or Ubuntu Linux for an OS

Productivity
AbiWord 2.4.1
MoinMoin 1.3.4
OpenOffice.org 2.0
PDFCreator 0.8.1 RC9

Design

Blender 2.37a
GIMP GNU Image Manipulation Program 2.2.9
NVU 1.0
Inkscape 0.44

Internet/Networking
Firefox 2.0 Beta
Thunderbird 1.5 RC1
Gaim 1.5
FileZilla 2.2.27

Multimedia
Audacity 1.2.3
Celestia 1.3.2

Utilities
7-zip 4.23
Notepad2 1.0.12

Games
Sokoban 1.253
Battle for Wesnoth 1.0.1

Search them on Google for the latest Downloadable Versions for your OS.

Notepad2 is pretty cool I must say...

Thanks for that list.

I've been reading up about linux lately and have wanted to try it as i’m about finished with XP (and Vista RTM just doesn't do anything for me) so i'm currently downloading the desktop version of Ubuntu Linux.

Ubunti is nice, but my recommendation...

Debian - its so easy to install things just do apt-get update then apt-gte install (whatever you want) and it will sort out all its requirements and do it via the net. Currently its text based installer but its well laid out, cant go wrong apart maybe from in partitioning but if youve managed to install an nt system before it should be ok

Dont go for the sarge (stable) version, its too old, go for Etch (testing) version - download the 40mb netinstall businesscard cd rather than the 15cds and it just installs what you select

I have been using it for ages its so stable and i keep it up to date with

apt-get updgrade OR apt-get dist-upgrade

If you have quite alot of ram download MS virtual pc and try out debian on it first to see if u like it (its the daddy of ubuntu etc.... and is about the most opensource as you can get)

Dont get SuSE, Fedora or Ubuntu are ok, and Debian is probably my recommendation!

.

XaraXtreme is supposed to be good Free Open-Source software for Mac&Linux. It seems to be an advanced version of Inkscape... then again, I've only used it for a few days... The Windows version looks good, too, but I don't wanna pay for it   .

Songbird also looks like a good piece of future software. Still in development now - seems to crash more than fly .

And as for my preferred Open Source OS, I'd recommend PCLinuxOS. Their hardware detection is amazing, and their community help is unparalleled in any other distribution.

(The links are for people who are too lazy to google)

Another Ubuntu/Kubuntu user here
I'm not too clever on the linux side but it does what I need it to do.....it allows me to run Folding@home without yet another xp licence.

I'm on Ubuntu (well... sorta, Windows takes preference on my desktop) and Gentoo on my laptop.

Other good software I think includes Scribus and Freeciv.
